Chicken Enchilada Casserole:

I usually make an enchilada casserole rather than enchiladas, as it’s a lot easier to layer than individually roll. This time, I made all of my ingredients from scratch (nothing out of the can: salsa verde and diced green chiles. I did, however, buy my chicken thighs – I wasnt’ quite up to raising my own chickens and all that’s required to turn those birds into usable thighs or breasts.)…So, here is my sulfite-free version of chicken enchiladas. Although, when I made them, I was too impatient to wait, so I didn’t turn it into a casserole. I made my own flour tortillas and guacamole and served it burrito style. I also didn’t want as much cheese as I would normally use in a casserole, as I’ve read that cheese naturally has sulfites in it. Serving everything in a burrito-bar fashion allowed everyone to put as much or as little of whatever they wanted in their burritos. It worked for me! Chicken Kurma (Korma):

One day, I was at my pastor and his wife’s house and had the opportunity to taste some authentic Indian food that his mother had prepared. It was amazing! When next I saw his mother, I asked her for the recipe. She cooks out of love (i.e. no recipe), so I was forced to go on-line to get a basic recipe and then sit down with her and go over it together. Chicken Soup:

Herb Parmesan Chicken:

Lemon Thyme Roasted Chicken:

I had bought two whole chickens and wanted to do something different than I had been, so I experimented with a lemon chicken. I was very pleased. My husband is not a big fan of lemon chicken, so I kept the flavoring on the mild side, splitting the rub between two chickens. I would have loved it the full flavor, but wanted to respect my husband’s preferences. I planned on using the second chicken to make baked creamy chicken flautas, so didn’t want the chicken to have too strong of a flavor. Orange Chicken

I love Chinese food! There is something about the crisp breading covered in a sweet and tangy sauce that is just so delicious! Eating out hasn’t always been in our budget, so I’ve learned to cook some of my favorite restaurant dishes at home. Now, I’m altering all of those recipes to accommodate my sulfite-free needs. To do this dish, I had to come up with many sulfite-free recipes, but it was worth it! I am so glad to have it part of my dinner repertoire once again! I love it so much, that I make a big batch, so we can have leftovers. I don’t tire of it and neither does my family. This recipe has multiple steps to it. It can all be done in one afternoon or you can make the sweet orange marmalade and barbecue sauce ahead of time. Read More


Tortilla Soup:

I love the flavors in tortilla soup. I used to make a wonderful tortilla soup from 1,000 Vegetarian Recipes cookbook. I’ve altered that recipe here to accomodate a sulfite-free diet. One of the great things about this recipe is that you can make everything fresh purposely for this recipe or you can use up your leftovers from the chicken enchilada casserole or from a roasted chicken! Most recently when I made this, that is exactly what I did, using the leftover juices and chicken from the casserole, which I had instead served burrito style. Read More
