I love the flavors in tortilla soup. I used to make a wonderful tortilla soup from 1,000 Vegetarian Recipes cookbook. I’ve altered that recipe here to accomodate a sulfite-free diet. One of the great things about this recipe is that you can make everything fresh purposely for this recipe or you can use up your leftovers from the chicken enchilada casserole or from a roasted chicken!
